Tofu Salad Wraps

1 package tofu (firm or extra firm)

Nutritional yeast

vegan mayo

1/2 yellow onion, diced

2 stalks fennel, chopped

1/4 cup pistachios

15-20 grapes, cut in half

zest of one orange

Hand-squeeze the tofu, break it into pieces on a cookie sheet and baked for 20-25 minutes (flipping halfway through).

Season the cooked tofu with nutritional yeast. Add vegan mayo, yellow onion, fennel, pistachios, grapes, and orange zest. Place mixture in wrap, roll and cut in half.

I recommend the chili-onion wraps from Trader Joe's.
