Chocolate Peanut Butter Pillow Cookies

Recipe from Vegan Cookies Invade Your Cookie Jar

For the dough:
1/2 cup canola oil
1 cup sugar (i use raw)
1/4 cup maple syrup
3 Tbsp plant-based milk
1/2 tpn vanilla
1 1/2 cups flour
1/3 cup cocoa powder
2 Tbsp black cocoa powder (or more regular)
1/2 tsp baking soda
1/4 tsp salt

For the Filling:
3/4 cup natural peanut butter
2/3 cup powdered sugar
2-3 Tbsp nondairy milk
1/4 tsp vanilla

In a large mixing bowl, combine oil, sugar, maple syrup, plant-based milk, and vanilla and mix until smooth. Sift in flour, cocoa powder, baking soda, and salt. Mix to form a moist dough.

Make the peanut butter filling in another mixing bowl by mixing the filling ingredients to form a moist but firm dough.

Preheat oven to 350

Roll the peanut butter mixture into balls. Flatten chocolate dough in pieces just big enough to cover peanut butter balls. Place peanut butter balls on top and fold chocolate dough over and around.

Place on a baking sheet and bake for 10 minutes.
