Broccoli Burgers
2 Tbsp flaxseeds
1 cup chopped broccoli (fresh or frozen)
1/2 cup chopped almonds
3/4 cup diced red onions
1/2 cup bread crumbs
1/4 cup water
vegan mayo
Combine flax seeds with 6 tablespoons of water. If using ground flax seeds, whisk with a fork and let sit for five minutes. If using whole flax seeds, mix with an immersion blender..
Mix flax seed mixture, broccoli, almonds, onions, bread crumbs, and water. Add salt and pepper to taste. Shape four patties and put on a sprayed baking sheet and bake at 375 for about 25 minutes (flipping once).
Serve on toasted bread or a bun with vegan mayo and, if desired, lettuce and tomato.
