Plant-Based Meatloaf
This one is always a hit and has become a staple of holiday food options for us.
10 Beyond Burger patties
2 cups bread crumbs
1 onion, chopped
1/2 cup ketchup
4 tsp garlic powder
4 tsp vegan Worcestershire sauce
1 Tbsp parsley, chopped
1 1/2 tsp salt
1 1/2 tsp pepper
Thaw the burgers earlier in the day.
Crumble or mash them into a bowl. Add the other ingredients as listed and mix.
Line a pan with parchment paper or spray with a cooking spray. Form the mixture into a loaf and bake at 400 for about 40 minutes.
Leftovers make great sandwiches the next day on a roll.
