Breakfast Sandwiches

1 pkg super-firm tofu

Nutritional yeast

Garlic Powder

Onion Powder

Red Pepper Flakes

Turmeric

Olive Oil

Bagel, English muffin, or wrap

Plant-based cheese slices (Follow Your Heart’s Smoked Gouda is our favorite)

1 pkg vegan sausage (cylinder shape, our favorite for this is Lightlife’s Gimme Lean, Impossible works well too)

Hand squeeze the tofu block to remove excess water. Slice into three slices longways. Places slices individually between a kitchen towel, folding the towel over for the next slice, to help remove moisture.

Add a generous amount of nutritional yeast into a bowl. Add small amounts of garlic powder, onion powder, red pepper flakes, and turmeric (or vary it up, you can’t really go wrong).

Heat a skillet with some olive oil.

When the pan is hot, remove the sliced tofu from the towel and use the top (open end) of a mug to cut each piece of tofu into a circle shape. Bread the tofu with the nutritional yeast mixture on both sides then place in pan to cook. After you bread the tofu circles, bread and add the extra scraps of tofu to the pan as well.

Cook until brown on the bottom, then flip and repeat until golden everywhere. Pull from pan and set on a plate.

Place your bagel or English muffin in the toaster oven with a slice of cheese on it. (if using wrap, you can heat it in the microwave with the slice of cheese to melt).

Shape the sausage into patties and add to the pan, until brown on both sides and cooked throughout.

Assemble your sandwich with a slice of tofu, a sausage patty, and whatever condiments you’d like (ketchup, hot sauce, mustard, etc)

You can add avocado or tomato slices if desired.
