Angeled Potatoes

6-8 small potatoes

Hummus to coat potatoes

1/4 cup vegan mayo (Vegenaise)

1 tsp yellow mustard

1 Tbsp chopped onion

1/4 tsp garlic powder

1/4 tsp paprika

1/4 tsp turmeric

dash of hot sauce

Peel and slice the potatoes into halves, lightly coat them in hummus, and bake them at 350 for 45 minutes.

Let them cool. Then using a spoon, scoop out the insides into a bowl leaving space to fill the potato halves.

To the bowl with the scooped insides of the roasted potatoes, add the mayo, mustard, onion, garlic powder, paprika, turmeric, and a dash of hot sauce, and stir.

Spoon the mixture back into the potato halves.

These are great hot and equally great cold.
