Peanut Butter Noodles
1 package noodles (spaghetti or rice noodles)
1 Tbsp olive oil
3 garlic cloves, minced
1 Tbsp fresh ginger, grated
2/3 cup natural peanut butter
4 Tbsp tamari / soy sauce
2/3 cup hot water
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 Tbsp sriracha
1 Tbsp maple syrup
1 tsp chili flakes
cilantro
peanuts, chopped
lime
Directions:
1. Cook noodles according to the package; rinse to prevent sticking.
2. Sauté garlic and ginger in oil for 5 minutes.
3. Whisk peanut butter, tamari, vinegar, sesame oil, sriracha, maple syrup, and chili flakes with water. Add to pan with garlic and ginger and heat for a couple minutes.
4. Toss noodles with sauce and serve. Garnish with cilantro, peanuts, and juice from the lime.
