Chocolate Covered Peanut Butter Balls
I found a recipe for one thing, that led me into recipes for other similar things, that led me to experiment with different batches, that led me to my favorite combo:
Mix
1 cup peanut butter (I use Smucker’s natural crunchy)
1/4 cup vanilla wafers (Giant Eagle's brand is vegan), smashed
1/4 cup graham crackers, smashed
Combine all ingredients and make balls. Place on parchment paper and cool in the fridge. When ready, dip in chocolate (melted in a double broiler: a pan inside of a pan with water to keep chocolate from burning). Put back on the parchment paper and into the fridge to cool.
You can add 1/4 cup powdered sugar and 1/4 cup melted vegan butter to make them even sweeter, if desired.
