Mom’s Homemade Bread

2 cups oats
1 1/2 Tbsp salt
1/4 c vegetable/canola oil
4 cups boiling water
3 T dry yeast
1 cup brown sugar
2 cups lukewarm water
12 cups flour

(you can half the recipe if you prefer)

Put oats, salt, and oil in a large mixing bowl. Pour in boiling water and mix. Let stand until lukewarm.

Dissolve yeast and sugar in lukewarm water. Add to lukewarm oat mixture. Add in 6 cups of flour and beat in. Add more flour until the dough is slightly sticky but workable. Place in a bowl and cover with a damp towel. Let rise until doubled in bulk (about 2 hours). Shape into loaves and put in bread pans. Let rise until doubled in bulk.

Bake at 350 for about 30 minutes, until golden brown.
