Cookie Brownie Bars

One brownie recipe on the bottom of a greased 9x13 (or so) pan. One cookie recipe on top.

Brownie recipe:
3 Tbsp flax seeds
2/3 cup cocoa
3/4 cup canola or vegetable oil
2 cups sugar
1 tsp vanilla
1 ¼ cups flour
1 tsp baking powder
1 tsp salt
1 cup chopped walnuts, optional

If you are using ground flax seeds, mix with 9 tablespoons of water and whisk with a fork, let sit. If you are using whole flax seeds, mix with 9 tablespoons of water and blend with immersion blender.

Mix cocoa and oil together. Add sugar, flax seed mixture, and vanilla and stir until blended. Stir in the dry ingredients and mix. Stir in nuts and mix, if using. Pour into a greased 9x13 (ish) pan.

Cookie recipe:
2 tablespoons flax seeds
2 ¼ cups flour
¾ cup brown sugar
¾ cup raw sugar (or white sugar)
¼ cup rolled oats
1 teaspoon baking soda
1 teaspoon salt
1 cup canola oil (or vegetable oil)
1 teaspoon vanilla
1-2 cups dairy-free chocolate chips

If you are using ground flax seeds, mix with 6 tablespoons of water and whisk with a fork, let sit. If you are using whole flax seeds, mix with 6 tablespoons of water and blend with immersion blender.

Mix dry ingredients. Add oil, vanilla, and flax seed mixture. Mix. Add chocolate chips and mix. Layer on top of brownie batter in your pan.

Bake at 350 for 25-30 minutes.
