French Toast

Blend 1 Tablespoon of flax seeds with 3 Tablespoons of water (if using ground flax seeds, you can whisk together with a fork and let set for 5 minutes; if using whole flax seeds, you can use an immersion blender to mix).

Pour the mixture into a container you’ll be able to dip sliced bread into. Add a little almond milk, cinnamon, and a teaspoon of vanilla, and stir.

Heat your pancake griddle or a skillet on the stove and spray with cooking spray to prevent sticking. Slice some good toast (my mom’s homemade recipe is delicious or find something from the bakery section at your grocery store). Dip the bread slices into the mixture, flip so both sides are coated. Place onto griddle/skillet. Cook until ready on one side (watch them, they can be ready quick), then flip and cook the other side.

Top with maple syrup and serve with lots of fresh fruit.
