Uncheese Sauce

Dubbed “uncheese sauce” by my kid when they were young, and I liked the name so I’ve stuck with it.


1/4 cup raw cashews
1/4 cup red bell pepper
1 tsp onion powder
1/2 tsp garlic powder
1/4 cup nutritional yeast
1 1/2 tsp sea salt
1 Tbsp lemon juice
3 Tbsp arrowroot (can sub corn starch)

Place 1 cup of water in a pan on the stove.

In blender, add all the listed ingredients above plus 1 cup water here too.


Mix well. Bring your water on the stove to a boil. After the water boils, add the contents of the blender into the pan and stir. The sauce will thicken quickly, within a few minutes, then turn off the stove.

It may look too watery at first and you may doubt if you need both cups of water (one in the blender ad one on the stove), but it will thicken well.

Serve over whatever you like. We tried it over noodles and over roasted veggies (potatoes, carrots, zuchini, red pepper, onion). Then we dipped tortilla chips in the leftovers for a snack.
