Christmas Cookies

This is designed to make A LOT of cookies for our family cookie bake at Christmas. Feel free to cut recipe down.

5 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups brown sugar
1 cup canola/vegetable oil
3 Tbsp flax seeds
1 tsp vanilla

If using ground flax seeds, mix with 9 tablespoons of water and whisk with a fork and let sit. If using whole flax seeds, mix with 9 tablespoons of water and mix with an immersion blender.

Mix dry ingredients. Separately, mix oil, flax seed mixture, and vanilla. Then mix both together. Chill.

Roll out and cut into desired shapes. Bake at 375 for about 8 minutes (until no depression remains when touched lightly with finger).

Frosting:
4 sticks vegan butter
3 pounds powdered sugar
3/4 cup plant-based milk
1 teaspoon vanilla

Mix in mixer or by hand.

I used strawberries for the pink icing coloring and cocoa powder for the brown coloring.
