Fried Rice
Leftover rice works best, so prep this the day before if possible. Cook 1 1/2 cups of rice. Then store in fridge until ready to make the fried rice.
Sauté broccoli, red onion, garlic, red and green peppers, and peas (or whatever veggies you’re feeling). Add the cooked rice. Grate fresh ginger into pan. Add soy sauce and a little sesame oil. Mix and serve.
