Tofu Scramble
Super flexible, be adventurous. Find the combos that work for you.
Hand squeeze one package of tofu to remove extra water and cook in a skillet over medium heat with a little olive oil until tofu is starting to golden. Add nutritional yeast. Add whatever veggies and plant-based meat you’d like to cook. When those have cooked, add herbs, seasonings, and other additions.
Necessary ingredients:
1 package of firm or super firm tofu
Nutritional yeast
Optional additions:
Veggies (onions and garlic are always staples. I’ve used broccoli, carrots, brussels sprouts, ginger, cauliflower, and so much more)
Plant-based sausage (Beyond or Field Roast)
Plant-based cheese (Follow Your Heart parm)
Cherry tomatoes (sliced in half)
Salsa
Herbs: basil, chives, cilantro, parsley, mint
Seasonings: nutritional yeast, black pepper, red pepper flakes, fox point, turmeric, onion powder
Hot sauce: We’re very fond of Ol’ Dirty Sheets’ funky kingston, gochujang is good in it too.
For the pictured scramble:
I hand squeezed out the water then ripped a package of extra firm tofu into a pan with a little olive oil. Cooked until starting to golden. Added one spicy Beyond sausage and sautéed some more. Added scallions, nutritional yeast, granulated garlic, onion powder, red pepper flakes, fox point, black pepper, gochujang, salsa, cilantro, and Follow Your Heart parm.
