Peanut Butter Bars
For bars:
2 Tbsp flax seeds
3/4 cup vegan butter
1/2 cup raw sugar
1 cup brown sugar
1/2 tsp vanilla
1/2 cup peanut butter
3/4 Tbsp baking soda
1/2 tsp salt
1 1/2 cup flour
2 cups oats
For Frosting:
1/4 cup vegan butter
2 Tbsp cocoa
1/4 cup plant-based milk
2 1/2 cup powdered sugar
2 tsp vanilla
Combine the flax seeds with 6 Tbsp water. If using whole flax seeds, use an immersion blender until the mixture is gooey. If using ground flax seeds, whisk with a fork and let sit for five minutes.
In a bowl, combine butter, sugar, brown sugar, and mix. Add flax mixture, vanilla, and peanut butter, and mix.
In a separate bowl, combine baking soda, salt, flour, and oats. Mix, then add to the other mixture and combine.
Bake at 350 for 17-21 minutes.
When cool, add a thin layer of peanut butter over the bars.
Make frosting by heating butter, cocoa, and plant-based milk in a saucepan. Bring to boil and stir for 2 minutes. Remove from heat and add powdered sugar and vanilla. Mix and spread over bars. Chocolate will thicken as it cools.
