Peanut Brittle

1 cup sugar
1/2 cup light corn syrup
2 cups raw nuts of choice
1 tsp vanilla
1 Tsp vegan butter
1 tsp baking soda

In a microwave safe bowl:

Mix sugar and corn syrup and microwave on high for 3 minutes 15 seconds

Stir in nuts. Microwave on high for 3 minutes 15 seconds.

Stir in vanilla and butter. Microwave on high for 90 seconds.

Stir in baking soda. Spray cookie sheet, then pour the mixture ono the sheet. Spread out and flip over (using a spatula or the back of two spoons). Cool and break into pieces.

This works well for most nuts. Cashews, pecans, and peanuts are all great in this.
