Pancakes
1 cup flour
1/4 oats
1 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
2 Tbsp vegetable/canola oil
1 banana, mashed (fresh or thaw frozen)
1 1/4 cups plant-based milk
Chocolate chips
Fresh berries or other fruit
Maple syrup
Mix dry ingredients. Add oil, mashed banana, and plant-based milk, mix until blended. Add chocolate chips to desired ratio. You can also add blueberries or strawberries to the batter. Cook on pancake griddle or skillet. Top with fresh fruit. Serve with maple syrup.
