Granola

1 cup chopped nuts (walnuts, pecans, sliced almonds all work well, you can combine)

1/2 cup maple syrup

2 1/2 cups Oats

1 cup seeds (sesame, sunflower, and pumpkin all work well, you can combine)

1/2 cup oil (you can leave out if you prefer)

1/2 cup shredded coconut (or coconut flakes)

Pre-heat the oven to 300

Soak the nuts in the maple syrup while you mix the rest.

Mix the oats, seeds, oil, and coconut (if you are using coconut flakes, wait until later to add)

Add the soaked nuts into the mixture and stir.

Spread over a cookie sheet and bake, stirring every 15 minutes, until golden. Likely 30-45 minutes, but watch so it does not burn.

If you are using coconut flakes, add them and stir when you are down to 10-15 minutes left in baking.
