Goi Ga
Goi Ga (Vietnamese Tofu Salad), recipe from my friend, Madalyn’s mother. Okay, technically "Vietnamese Chicken That I Substituted Tofu Instead Salad," but that doesn't have the same ring.
tofu
cabbage
white onion
scallions
black pepper
salt
fresh mint
unsalted peanuts
Drain tofu and rip into pieces on a greased cookie sheet. Bake at 450 until golden (20-25 minutes).
Shred cabbage and sprinkle with salt. Let stand, cabbage will soften. Pour cold water over cabbage and squeeze to dry (this must be done about 2 or 3 times). Chop white onions into strips. Dice scallions. In skillet over low heat, use a little oil to sauté onions. Add tofu, and season with black pepper and salt. Turn off heat. Pour over cabbage, add scallions and mint, and mix. Crush unsalted peanuts (a lot) and mix when ready to serve.
