Buckeyes

This recipe comes by way of my great Aunt Esther through my sister and my cousin, Beth. This is halved from the original recipe.

2 cups peanut butter (I used Smucker’s all natural crunchy)

3 cups powdered sugar

1 stick (1 cup) vegan butter, melted

1 Tbsp vanilla

vegan chocolate chips to melt (shouldn’t need more than one bag)

Thoroughly mix peanut butter, sugar, butter, and vanilla. Chill until firm.

Roll into balls the size of real buckeyes (about the same size as walnuts). Place on a shallow pan lined with waxed paper or parchment paper. Chill until firm.

Melt chocolate in a double broiler (put a small pan inside a larger one, put water in the larger pan so the small pan still sits inside, so the chocolate doesn’t burn). Once melted, dip the balls into the chocolate using a toothpick, leaving the top part uncoated so they look like buckeyes. Return to the wax/parchment paper. Chill. Keep in refrigerator.
