Banana Muffins

2 Tbsp flax seeds
2/3 cup plant-based milk
2 tsp white vinegar
2 1/3 cup flour
1 1/3 cup raw sugar (or sub sugar)
1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
2/3 cup veg/canola oil
2-3 mashed bananas

Optional:
chocolate chips
blueberries
strawberries
cinnamon

If using ground flax seeds, mix with 6 Tbsp of water and whisk with a fork. Let sit. If using whole flax seeds, mix with 6 Tbsp of water using an immersion blender.

Mix plant-based milk and vinegar in a large mixing bowl. Add flour, sugar, baking powder, baking soda, and salt. Mix. Add oil, flax seed mixture, and mashed bananas (you can use frozen bananas, just microwave them first).

If using, now add chocolate chips, blueberries, and/or sliced strawberries.

Spray two muffin pans with Pam, add mixture to each spot. You can top with some additional raw sugar mixed with cinnamon (recommended).

Bake at 350 for 20-22 minutes (rotating pan placement halfway through)
