Tempeh, Lettuce, and Tomato Sandwich
1 pkg of tempeh
olive oil
soy sauce
maple syrup
good bread, sliced and toasted
2 tomatoes, sliced
several leaves of lettuce
vegan mayo (Vegenaise)
Cut the tempeh into long strips. Cook in a skillet over medium-high heat with a little olive oil. Cook until brown, flipping to brown on both sides. Remove pan from heat and drizzle generously with maple syrup and soy sauce.
Slice and toast your bread (we typically use Mom’s Homemade Bread)
Slice your tomatoes and wash some lettuce leaves.
Assemble the sandwich by spreading the mayo on the toast, adding strips of tempeh, a slice of tomato, and a large leaf of lettuce. Cut sandwiches in half.
Enjoy.
We recommend serving with roasted potatoes.
