Oatmeal Cake
1 cup oats
1 cup hot water
1/2 cup vegetable/canola oil
1 cup sugar
1 cup brown sugar
2 Tbsp flax seeds
1 1/4 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
Mix flax seeds with 6 tablespoons of water. If using whole flax seeds, mix with an immersion blender. If using ground flax seeds, whisk together with a fork and let sit five minutes.
Put oats in a large mixing bowl. Pour hot water over the oats. Add all the remaining ingredients. Mix well. Pour into greased 9x13 (ish) pan. Bake at 350 for 30-35 minutes (until a toothpick comes out clear in the center)
Topping:
1 cup brown sugar
1/4 cup vegan butter
1/4 cup plant-based milk
1 cup coconut
Mix and add over cake (or over brownies) after they have cooled. Broil cake with topping for 1-5 minutes with the door open. Let coconut start to brown
