Crispy Rice Paper Pancakes
Super simple and I loved these.
Rice paper wrappers
part of a red cabbage, chopped
1 carrot, grated and then chopped
1 scallion, chopped
soy sauce
I used a peeler to make the carrot slices thin, then diced them, a scallion, and some red cabbage.
Heat a skillet on medium with a little olive oil. When hot, dip a rice paper wrapper quickly in warm water and lay onto skillet. Top with your chopped veggies. Dip another rice paper in water and place on top. Use a spatula to push the edges of the rice paper into each other. Heat until crispy (3-5 minutes) on the bottom. Flip and repeat for the top. Then put on your cutting board and cut into pieces.
I dipped in soy sauce with a little wasabi
