Chocolate Pudding
2/3 cup sugar (i use raw)
1/4 cup cocoa
3 Tbsp corn starch
2 1/2 cups plant-based milk
2 Tbsp vegan butter
1 tsp vanilla
Whisk together sugar, cocoa, and cornstarch. Add milk and whisk. Put pan over medium heat and simmer while whisking often. Continue to simmer for about 3 minutes, until slightly thickened and glossy. Remove from heat and whisk in vegan butter and vanilla. Cover and cool in refrigerator.
