Bruschetta
2 medium tomatoes
1 clove garlic, minced
5-10 basil leaves, finely chopped
a few parsley leaves (optional)
1-3 Tbsp olive oil
salt and freshly ground black pepper
slices of a good rustic bread, a baguette works well
1-2 garlic cloves, cut in half

Chop the tomatoes. Combine in a bowl with minced garlic, chopped basil leaves, chopped or dried parsley (if using), and olive oil. Add salt and pepper to taste. Combine and let marinate for 20-30 minutes.
Heat a skillet on medium heat. Rub the sliced garlic clove over the bread slices. Brush olive oil over one side of slice (or pour some olive oil in the pan). Cook until the bread is golden. Brush olive oil on the top side, then flip and bring the other side to golden as well.
Plate toast and scoop the tomato mixture on top. Enjoy.
